This meaty mushroom is full of umami flavor, making a great substitute for red meat and pork. It's a prized medicinal mushroom as well. Treat it like meat--best cooked: fry, grill, stir fry, stew, marinate, braise, dry and powder... the possibilities are endless.
Shiitakes have reported health benefits, with a long history of being used as a medicinal mushroom for boosting the immune system and lowering cholesterol. Ours are log grown from locally harvested and reclaimed hardwood logs, leftover from tree harvesting and trimming operations.
We grow a variety of oyster strains, including the sunny Golden Oyster, Italian and Grey Dove. They're flexible eaters, and grow on logs as well as sawdust, straw, wood chips, and coffee grounds--wonderful recyclers along with being nutritious and delicious!
Use in a variety of dishes...stir fry, sauteed with butter and garlic, in omelets, soups, over steaks and on sandwiches and pizza.

Slice a pound of shiitake caps and marinate in fridge for several hours. Fry in cast iron skillet or bake in the oven for an hour at 350, (flipping halfway), then 10 minutes (watch!) at 425.

• 1/2 c. soy sauce (or Bragg's amino acids)
• 1/2 c. maple syrup
• 1/4 c. liquid smoke
• 2 Tbl worcestershire sauce
